Procedure Text: How to make Shrimp Soup

Shrimp Soup


Ingredients

o  1 lb jumbo shrimp

o  2 tsp grated lemon zest

o  1 carrot , peeled and sliced


o  1 celery stalk, sliced

o  I onion sliced

o  2 plum tomatoes, chopped

o  1 cup fresh cilantro leaves, resever stems

o  6 cups water

o  2 cups coconut milk

o  1 tsp red curry paste

o  1 tsp brown sugar

o  2 tsp fish sauce

o  8 oz hokkien noodles

o  Juice of 2 limes

How to make it

v Peel and devein shrimp, reserve heads and shells.

v Place shrimp heads and shells in large saucepan.Add lemon zest, carrot, celery, onion, tomatoes,and chopped cilantro stems and add water. Bring to boil, reduce to low, cover and simmer, stirring occasionally for about 20 minutes.

v Strain stock through fine mesh sieve

v Return measured 5 cups of stock to saucepan, stir in coconut milk, curry paste, sugar, fish sauce, noodles, lime juice, cilantro leaves, and shrimp

v Bring to boil, reduce heat to low, cover, and simmer, stirring occationally about 6 – 7 minutes

v Finally, shrimp soup ready to server
